No one has perfect redundancy at the price your going to pay here, the redundancy is good enough though that even with a major server blowup the down time is usually minimised to less than 8 hours or so. As an example recently one server had a hard drive crash, it was back up and running in about 2.5 hours

It's always roughly the latest version, new versions or patches do not get installed immediately though, they usually wait 4-6 weeks.
