I breifly considered going without billing on all plans but in the end settled on not going that way, to many risks if you forget to set a hard limit and the distinct possibility of having to end up with a custom plan for every customer that wanted to add something extra seemed like a real PITA to me.
Also when it comes time to pay their hosting subscriptions I don't have to worry about invoicing them, H-Sphere does that and sends them out a reminder email .. just one less hassle to worry about when you have 150+ customers.
You can completely remove the H-Sphere singup forms and use your own, you just have to post the right info back to H-Sphere at the end of your custom signup. As it is I'm still using the standard signup's without any modification and it doesn't seem to stop people signing up

Anyone ever do this or know if editing the plan will cause any problems to a live active account?

Won't be any problem, I do it all the time.
